"Glocalization" and Food Experience Design
The oldest City and trading port in the Philippines, Cebu is a melting pot of Asiatic cultures, Spanish and American colonial influence and the continuous influx from all over the world. Our talk would be in the form of interviews of two local chefs with Italian and Thai culinary expertise who use local or localized ingredients. The interviews would be done simultaneously with cooking demos of a dish each. Talking points would be on the "glocality" of Cebuano cuisine and how food outlets such as food markets, Sugbo Mercado to be specific, contribute to this world food experience in the city.
